So Why Eat REAL Bread?




Would you believe me if I said eating REAL bread contains 40 out of 44 key nutrients we need to survive? YES! 40 out of 44 nutrients that we need daily to survive. The other 4 missing nutrients missing are easy to replace. They are vitamins A, C, D, and the amino acid, lysine. We can easily get these missing nutrients by eating fruits, vegetables, beans/legumes, and being in the sun safely.


It's The Germ and Bran

These two parts of the wheat berry are crucial for REAL bread consumption to improve your health. The GERM has healthy omega fats, most abundant source of vitamin E, has antioxidants, phytonutrients, B vitamins, and minerals. The BRAN contains B vitamins as well, iron, soluble & insoluble fiber, trace minerals, protein, and enzymes to aid digestion.


Quick History Lesson

Before the 1900's people were able to get fresh milled flour daily (hence a lot of street names with 'Mill Road' in them) and bake bread at home. In the late 1800's to early 1900's it was discovered by sifting away the germ and bran while only leaving the white flour (aka the endosperm of the wheat berry) could be shelf stable for long periods by not going rancid due to the healthy fats in the germ. Only the rich people were able to afford this new discovery of eating white flour but were soon plagued with diseases...sounds like our current times! Poor people were actually healthier because they could not afford the sifted away brand and germ. By 1910, the flour mills went out of business as the steel rolling mills provided white flour to both the poor and rich.


Diseases From White Flour

  • Pellagra - a vitamin B3 deficiency causes skin inflammation, diarrhea, dementia, and death.

  • Beriberi - a vitamin B1/thiamine deficiency causing nervous and cardiovascular system damage, and physical weakness.

  • Anemia - not having enough healthy red blood cells or hemoglobin to carry oxygen throughout the body. People can feel weak, tired, and have shortness of breath.


So now you might be asking yourself, "Where can I get REAL bread from?" If you live in the Phoenix area and would like for me to bake you some, I WILL! If you don't, call around to your local bakeries and ask them if they mill their own flour and if they're removing the bran and germ OR if the flour from they're supplier have removed the bran and germ. Lastly, buy a mill grain, heavy duty stand mixer, wheat berries and start learning how to bake your own bread. I don't regret this decision at all. Consuming REAL bread and educating others have brought me real joy!
